Martijn works as project manager and scientist for Wageningen Food & Biobased Research, which is an applied scientific research institute as part of Wageningen University & Research. Martijn was educated in craft bakery and holds a Bachelor degree in Food Technology, from Agricultural college Delft. For almost 20 years Martijn mainly works on contract research projects for various industrial partners as well as EU projects and public-private consortium projects. Some examples are EU funded HEALTHGRAIN and HealthBread projects, TIFN project Texture–Taste interactions and LeapAgri project Nutrifoods. Martijn’s key research activities include reformulation of bakery products and snacks (i.e. sugar, sodium, fat reduction), dietary fibre functionality in bakery products and 3D printing as an innovative process to manufacture food products.
