Dr. Ciarán Forde is Senior Principal Investigator in ‘Sensory Nutritional Science’ at the Clinical Nutrition Research Center, a part of the Singapore Institute for Clinical Sciences. He holds a joint appointment with the National University of Singapore as an Associate Professor in the Department of Physiology, and is Adjunct Professor in the School of Agriculture and Food Science, University College Dublin in Ireland.
Dr Forde joined the Clinical Nutrition Research Centre in 2015 to establish the ‘Sensory and Ingestive Behaviour’ lab, which seeks to understand how a foods sensory properties can be used to influence calorie selection and eating behaviours and through this impact energy intake and body composition. Dr. Forde’s team also conducts research on children’s eating behaviours as part of the Growing up in Singapore to Healthier outcomes (GUSTO) birth cohort. By taking a lifespan approach, the goal is to understand how sensory factors can be used to influence food choice and intake behaviours, and through this develop food-based strategies to improve diets and health.
Dr. Forde has previously spent over 11 years in several food research roles in the UK, Australia and most recently at the Nestlé Research Centre in Lausanne, Switzerland leading research on sensory and cognitive factors that influence food intake. He holds a BSc. in Food Chemistry and PhD. in Sensory Science, from the Department of Nutrition, University College Cork in Ireland.
